It’s go time & Chicken Fajita Bowl

Guess what I picked up yesterday?

Aren’t they beautiful? 😀  They’re a little darker than I wanted, but I’m just glad they are actually in my possession!

It’s go time my friends!  This morning I was scrambling to finish packing for the HLS, pack my overnight bag, pack up my house & perishable foods etc.  I managed to squeeze in a 3×3 interval though thankfully!  Here’s the stats:

Pretty good on the running times!  And a decent improvement from Monday’s interval times–though I think I had a little pep in my step due to the fact that I’m heading out for Chi-town tomorrow!

B#1

Since I was running late this AM, I inhaled a Blueberry Bliss Luna bar on my way into the office.  I LOVE this flavor. 

I don’t know how else to describe it but this:  you know how when you are cleaning your ears with a Q-Tip and it feels so darn good you have to close your eyes?  Well that’s kind of how I feel about the blueberry bliss luna bar (and the white chocolate macadamia nut too)… so dang good, I have to close my eyes and enjoy the deliciousness.  This poses a problem when I’m consuming the bar while driving, but I work around it 😀

B#2

For breakfast #2 I had a raspberry chobani loaded with fresh blueberries and raspberries (about 1/2 a cup of each–trying to use up everything I have in the fridge!).  This is the first time I had tried the raspberry chobani, and I’m a big fan.

Gotta use up those berries!

Prior to starting my mission to healthify my life, I would ONLY eat regular (full sugar/full fat)  fruit on the bottom yogurt.  I hated yogurt that wasn’t fruit on the bottom because my favorite part of the yogurt was the chunks of fruit.  Why did it not dawn on me to add fresh fruit to fat-free yogurt??? 

Sometimes it can be so EASY to make healthy switches (and have them still taste delicious!).

Lunch

Attempt #3 to use up the rest of the leftovers from Tuesday night’s dinner with  my girlfriends.  Yesterday, I made a chicken fajita for lunch and a Shrimp and Bean Tostado for dinner… So for lunch today, I figured I’d go for my healthified version of a Chipotle chicken fajita bowl.

My bowl consisted of 1/2 a bag of romaine lettuce topped with 1/4 cup El Paso Fat-Free refried beans:

Then I added 4 ounces grilled chicken and all the leftover grilled onions, peppers, and zucchini:

Next I added chopped up tomato, fresh onion, chopped cilantro, some banana pepper rings, and 2 tbsp fat-free breakstones:

I popped the lid on the bowl and gave it a through shaking.

And that my friends was the end of the leftovers from Tuesday night’s dinner 🙂  FINALLY!

The great salad extraction…

Before we get into my salad debacle, let’s recap breakfast!

Breakfast #1

While getting ready for work this morning, I realized I wanted NEEDED eggs for breakfast.  I was already crunched for time, and considered passing on my fav B#1, but then it dawned on me.  EGGINS. 

“Eggins” are baked eggs that I cook up in a muffin tin.  Get it?  Egg + Muffin = Eggin 😉 (bear with me… it is Monday after all). 

I had 9 eggs in the fridge, so I decided to go with 2 whole eggs and 7 egg whites.  I mixed these up with S&P, Frank’s Red Hot, and a splash of water, and then evenly distributed them into 6 regular size muffin tins.  I also threw 2 cups of broccoli into a pan that I had sprayed down with cooking spray.  I seasoned the broccoli with some S&P, then threw everything into the oven at 350 degrees for 25 minutes while I continued getting ready for work.

2 breakfasts in < 5 minutes prep.  Bada bing, bada boom 🙂

I had 1/2 of the above ingredients at work today with some ketchup, of course:

Stats:  171 calories, 12g carbs, 5g fat, 21g protein, 2g fiber

Breakfast #2

Lunch

Now we get to the salad debacle.  Yesterday, I went to my sister’s for a cookout and brought a huge salad.  There was a ton leftover, which meant lunch for today 😀

Sad story:  the lettuce in the salad was EXTREMELY wilty and soggy this morning.  If there’s one thing I can’t stand, it’s soggy lettuce (and olives–not that there were any olives involved in this story but I just want to make sure we are clear 👿 ). 

Wilty and yucky:

I’m not one to waste food, so I decided to perform a salad extraction.  In preparation for this procedure, I brought a bag of lettuce from the fridge at home.

Piece by piece I sifted through the salad pulling out any of the soggy pieces.

I also had a Jennie O Turkey Sausage on the side with some mustard:

I may or may not have spent some time playing in the paint program over lunch…

Friday Theft?

It’s FRIIIIDAAYYYYYYYYYYYYY!!!!  Do you know  what this means?!?!  It’s our first Gionino’s Friday in many weeks!  Alas, that will have to wait til after work…..

I was having technical difficulties while working on last night’s post — but good news! I was able to add the video I wanted.. Check it out if you want a laugh!

Just for fun this friday, I used snapshots of my personal myfitnesspal page to show the stats on my meals.  Yes, that qualifies as “fun” in my mind 🙂

Breakfast #1

Fun fact about me:  I steal…. Um… let’s call it “hoard.”  Yes, hoard.  I hoard the Smucker’s Blackberry Preserves from our free office breakfasts.  “Steal” is too strong of a word for single serving preserve packet…  Right???

I love these blackberry preserves…  They have little bits of seeds and taste awesome:

Today I brought a Sweet Wheat Alternative bagel from home, and then we ended up having free bagels from Panera at work!  I stuck to my guns, and went with my Alternative bagel topped with about 1 tbsp of Panera’s low calorie walnut & honey cream cheese, and 1 packet of Smucker’s blackberry preserves:

Sometimes, life is just about compromises!   It’s crazy how different those stats are, and the Alternative bagel actually tastes like a real life bagel (unlike bagel thins).

Sad news though.  I only have 1 of my blackberry preserve packets left…. I hope we get some more soon!

Was the breakfast I accidently left at home yesterday!  It consisted of some dannon vanilla greek yogurt and slice up strawberries:

In anticipation of having PIZZZZAAAAAA for dinner tonight, I figured I’d go with a healthy salad for lunch.  Today’s salad consisted of:

  • 1/2 bag romaine lettuce
  • 2 ounces chopped up grilled chicken (heated up in the microwave)
  • 1 hardboiled egg
  • 1/2 a green pepper
  • 1 roma tomato
  • 1/4 cup red onion
  • 2 tbsp Ken’s Steakhouse Lite Italian Romano Dressing

(much needed) Return to healthy eating

Things are always a little hectic the first few days back to work after a vacation.  So last night I scrambled up some eggs and veggies.

For three servings:

  • 7 Egg whites
  • 1 whole egg
  • splash of water
  • S&P
  • Franks red hott
  • 1/2 green pepper
  • 1 large zucchini
  • 1/2 cup white mushrooms
  • 1 large green onion

I portioned the scramble out into three containers, and had one of them with some ketchup for my breakfast #1 at work:

Stats on B#1:  141 calories, 13g carbs, 1g fat, 19g protein, 3g fiber

Breakfast #2

Dannon Strawberry Greek Yogurt + 1/4 cup blueberries + 3 medium strawberries

Stats on B#2:  163 calories, 25g carbs, 0g fat, 12g protein, 2g fiber

Lunch

HUGE salad consisting of:

  • 1/2 bag fresh express romaine lettuce
  • 1/2 green pepper
  • 1/2 a large roma tomato
  • 1/2 a large cucumber
  • 1 hard boiled egg
  • 1/4 cup sliced red onion
  • 2 tbsp Ken’s Lite Northern Italian Romano Salad dressing

I LOVE hard boiled eggs on salads!

Stats on Lunch:  206 calories, 20g carbs, 10g fat, 11g protein, 7g fiber

Snack

On the way home from Charlotte, we st0pped at a Publix so I could pick up some Western Bagel Alternative Bagels.  Finally!!!  I had a blueberry bagel with 1/2 laughing cow swiss cheese wedge for my snack:

Stats on Snack:  128 calories, 27g carbs, 1g fat, 8g protein, 7g fiber

Dinner

Grilled chicken and roasted veggies:

Stats on Dinner:  245 calories, 17g carbs, 7g fat, 27g protein, 8g fiber

Dessert

FRUIT SMOOTHIE!  I mixed up a big batch for me and  Jarrod to split:

  • 1 cup fresh frozen strawberries
  • 1/2 cup fresh frozen blueberries
  • 1/2 cup stonyfield farms fat free plain yogurt
  • 2 packets truvia
  • 2 cups fresh spinach
  • 1 cup Almond breeze unsweetened vanilla almond milk

Stats on the smoothie:  95 calories, 20g carbs, 2g fat, 6g protein, 5g fiber

Healthified Buffalo Chicken Wrap

I had a serious craving for some buffalo chicken this afternoon, so I thought I’d take a shot at a healthified buffalo chicken wrap.

I mixed up the following in a little bowl:

  • 2 tbsp oikos plain greek yogurt
  • 1 tbsp franks red hot
  • sprinkling of Black pepper, garlic salt, red pepper flakes, onion powder

Then I mixed in 2.5 ounces grilled chicken shredded (all that was left from last sunday’s big grill up):

I put this mixture on top of a Joseph’s Low-Carb pita, and topped with a thinly sliced mini babybell cheese round and some banana peppers.  Then cooked in a 350 degree oven for 15 minutes and topped with some tomato:

Up close and personal:

This was delicious!  I tried a few bites of the buffalo chicken when it was cold, and I think I actually liked it better cold than heated up because I could taste the buffalo sauce better.  So two thumbs up, and next time I’ll keep it in a cold wrap rather than baking.
