Shrimp, and sex, and the city ;)

Tonight I am craving SHRIMP.  Last weekend, I ordered the Applebees low cal Shrimp and Island Rice  and it was DIVINE.  I felt like I was indulging!  (Side note – I also tried the skinny marg, which was nothing to write home about… though apparently it was worthy enough to blog about… haha)

Since then, I’ve been craving some shrimpies so that’s what is on the agenda this evening.

I found a new blog that I’m really enjoying that is all about healthy recipes called Skinny Taste

On the blog, I saw a delicious recipe for shrimp quesadillas.  I don’t have time to run to the store to buy all the ingredients before sex and the city 😀 😀 😀 — so I’m mixing it up a little bit based on what I have on hand.

  • 9 Large Shrimp
  • 1/2 tsp minced garlic, cayenne pepper, paprika, black pepper, lemon juice, water
  • 1/4 tsp salt

  • 1 Joseph’s Low Carb pita with Flax
  • 1/4 bag Calabacita blend veggies (leftovers from last night)
  • 1 slice pepper jack cheese goodness
  • Tomato, onion, banana peppers
  • 1 dollop of daisy fat free breakstones 😉

It’s all Greek to me…

Suprisingly, prior to this morning I hadn’t taken the plunge to try Greek yogurt!  It’s in every magazine I read, I see it on all the blogs I follow, yet I’ve never tried it.  Why is that?  Whelp, I assumed it wouldn’t be very filling or satisfying compared to eggs and veggies or oats and fruit. 

Today my friends, I took this plunge via homemade fruit-on-thee-bottom Greek yogurt.  I threw a couple strawberries and some blueberries in my blender (are you sick of hearing about my new toy yet?), and pulverized the crap out of them.

I didn’t have any granola in the house, so I brought a few shredded mini wheats and some chocolate oreos to toss on top 😀

I liked the yogurt but I think next time I should get vanilla instead of plain.  Plain was just a little, well…  plain

PS:  breakfast #1 consisted of PB2, whole wheat bagel thin, and banana.  This was in replacement of my sante fe style eggwich which I mistakenly put ground cinnamon on instead of red pepper flakes!  UGH!  Cinnamon and red pepper flakes happen to be the only 2 jumbo size spices I buy 🙁

Goulash oopsie!

Tonight I had a happy accident for dinner (which happens to be the best kind of accident 🙂    

I stumbled upon a dish very similar to one my mom used to make:  goulash!  I had planned on pasta with some steamed zucchini, but turns out the veggies I pulled out of the freezer had zucchini, corn, squash, onion, green pepper, and red pepper.  So I decided to throw the veggies in the red sauce and add some ground turkey.  The turkey and sauce were leftovers that I cooked up and froze sometime last week, so that made this dinner especially quick.  Threw it all on top of some carba nada.

That’s a TON of food!  Here’s the stats:  392 Calories, 50g Carbs, 7g fat, 34g protein, 8g Fiber.

Also decided to make a healthified hummus using my favorite new toy!  Here’s what I threw in the hummus:

  • 1 can garbanzo beans (drained and rinsed, bean juice reserved)
  • 1 tsp cumin
  • 1 tsp red pepper flakes
  • 1 tsp olive oil
  • 2 cloves garlic
  • About ½ cup of the reserved bean juice

Really happy with how this turned out!  Next time I may replace some of the bean juice with water since it was a little on the salty side.

Here’s an idea for a quick/healthy dessert.  Pop a couple frozen strawberries in your food processor and pulse until fruit breaks down.  Result:  Sorbet!  Can’t wait to try this with banana!

Snack, lunch, snack.

SNACK

I missed my Sunday cookfest this week due to the long weekend (no complaints here), so my meals are a little helter skelter this week.  Today’s mid morning snack came in the form of some delightfully cheery mixed fruit.

LUNCH

Today, I had a lunch meeting with the speaker programming committee of Akron’s Knowledgeable Network of Women, for which I serve as the chair-elect for 2010.  We discussed a lot of great ideas for future luncheons including a presentation on the green initiative in Akron and also a hands-on workshop where we’ll sit down with a nutritionist and learn how to eat healthy when dining out (right up my alley!).

I ordered a salad with grilled buffalo chicken (hold the cheese please) and fat free ranch.  So I believe I did pretty good for this lunch meeting.  I was not able to muster the courage to take a picture of my food, however.  I guess I’m just not ready for too many people to learn about this lovely blog.  In time, that may change.
