Is this what I ordered?! {the week in food}

A really bizarre thing happened the other night.  I was out to eat with friends at a new-to-me Italian restaurant here in Charlotte.  I’d  suggested the restaurant solely because I wanted eat their bucatini with grilled shrimp, pancetta, and tomato sauce on the Queen’s Feast restaurant week menu.  And if that’s not reason enough to force three of your comrades to dine at a restaurant, I don’t know what is.  When the waiter took our order, I pointed at the menu and said “I’d like the Shrimp Romana, please.”  Thirty or so minutes later, I was presented with a shrimp pasta dish, though this one had penne (not my beloved bucatini) and a white wine sauce.  I was so caught off guard, that I flagged down the waiter and asked if the dish was what I ordered.  He hastily assured me it was.  And I, somewhat embarrassed and not wanting to cause a scene, ordered another glass of wine and tried to hide my disappointment.  What the heck, Mary?!  I had never EVER ordered something wrong like this!  I was befuddled and sort of sour at the whole situation.

Breakfast on the Balcony

If only breakfast could start with this EVERY day:

Mmmmm veggies! 

I’m heading to Dallas for training this week, so the BF and I decided to cook up a special “last” breakfast… Oh, and by “we” I mean ME, of course.  There’s only one morning person in this relationship.  There’s also only one pants wearer.  I’ll let you guess who that might be 😉

It was a crazy bright and sunny morning, perfect for enjoying a little grub on the balcony.  Check out that beautiful tablescape!

Clearly getting food in our bellies ASAP was at the top of the priority list.

I was especially excited to make breakfast this morning because I’ve been dying to try out my new Oxo Eggbeaters that came in my Food Blog Forum swag bag!

YES!  I love gadgets!!!  And how cool are these eggbeaters?  The beater section pops off the handle and is dishwasher safe.  Honestly, I’ve never beaten eggs with egg beaters before–I usually just opt for a fork and whisk with all my might til my arm falls off.  Holy cow did these beaters make life a heck of a lot easier.  It was like the parting of the Red Sea…. the breakfast edition.  I swear I could hear angels singing as I beat those eggs to perfection. 

Using my beaten-to-perfection bowl o’ eggs, I made up a big batch of Mary’s special eggs (a list of the goodies I tossed in is at the bottom of the post).DSCF8125

Each serving went onto a low carb tortilla:

Topped with some low-fat pepper jack cheese and a bit of Frank’s Red Hot:

I also cooked up a pumpkin waffle using my Trader Joe’s Pumpkin pancake and waffle mix:

The waffle was good but not fall out of your chair delicious.  Apparently, if you don’t fall out of your chair the recipe is crap in my book.  I’m going to give the mix another shot in pancake form and see if it’s any tastier.

The wraps were fabulous.  You really can’t go wrong with the “special” combo!  I like to pop mine on the George Foreman grill for a few minutes to melt the cheese.

Mary’s Special Breakfast Burrito Wraps (serves 4)

  • 3 large eggs
  • 9 egg whites
  • 3 turkey or chicken sausages (Harris Teeter Hot Chicken Sausage)
  • 1 diced roma tomato
  • 1/4 chopped red onion
  • 4 white mushrooms, sliced
  • 2 cups fresh spinach, thinly sliced
  • S&P
  • Franks Red Hot
  • 4 Low Carb Tortillas (Tumaro’s)
  • 2 slices reduced fat pepper jack cheese (I like Sargento)

Waffles in mah belly

I woke up bright and early this lovely Saturday morning to head to Day #4 of Body Pump.  Apparently, sometime between Thursday and today the Y got new weights, which are LB weights as opposed to kilograms…  Needless to say, I was thrown off by this ABSOLUTELY INSANE change, but I managed through the class Smile

When I got home I wanted something a little special for breakfast.  Something delicious but balanced…

After some foraging in the kitchen, here’s what I came up with:

  • 2 Eggo Light Whole Grain Waffles
  • 1/2 cup Trader Joe’s vanilla fat free Greek yogurt
  • 3 sliced up strawberries
  • 1/4 cup of blueberries
  • 2 tbsp Smuckers Sugar Free Syrup

And that, my friends, was a whole heck of a lot of deliciousness.

Tuesday GFNBW, OO, BCW!

After my big b-day dinner last night, it felt especially good to get my run in this morning.  Today marks the completion of week #4 of my interval training plan!  I can’t believe I’ve made it this far, and still no knee pain.  I’m really looking forward to signing up for some races once I’m back to running a 100% of the time!

Here are my Runkeeper Pro stats for the interval:

3.04 miles in 32 minutes.  Not too shabby, given that I was power walking for 12 of the 32 minutes.  Next, I’ll be doing 3 10-minute intervals of 7 minutes running and 3 minutes walking.  Part of me is excited for this bump in run time, and part of me is nervous!

I’m not sure how they calculate the calories burned in this app since it never asked me to input my height, weight, or sex.  Pretty sure it’s not accurate, but at least the GPS function works!  Can’t really complain since it was free 🙂

Breakfast #1:  GFNBW

Grilled Fruit and Nut Butter Wrap!  These always make me smile 🙂

Today I spread 1 tbsp Trader Joe’s Crunchy Almond butter atop a Mama Lupe’s Low Carb tortilla along with some sliced strawberries and blueberries.

Then I grilled the wrap on the George Foreman grill, wrapped in foil, and enjoyed the deliciousness at my desk at work:

Breakfast #2:  OO

For my midmorning breakfast I had… surprise surprise – overnight oats!  I switched up my usual mix by adding blueberries.  I know, really pushing the boundaries here.

I swear I’m going to get more adventurous with my overnight oats! I’m going to miss these creamy morning treats on vacation:

Stats on B#2:  208 calories, 38g carbs, 5g fat, 6g protein, 6g fiber

Lunch:  BCW

I had planned on making a new dish using the leftover crabmeat from  my birthday dinner, but I was short on time this morning so I quickly grabbed the fixin’s for a buffalo chicken wrap.

That consisted of:

  • 1 Mama Lupe’s Low Carb Tortilla
  • 3 ounces shredded chicken
  • 2 tbsp plain Dannon Greek Yogurt
  • 1 tbsp Franks Red Hot
  • Sprinkling of Black Pepper & Garlic Salt

I had the wrap cold this time, and it was DELICIOUS.  Reminded me of the buffalo chicken dip Jarrod and I always make for get togethers, only about three thousand times healthier!

Stats on Lunch:  166 calories, 8g carbs, 4g fat, 28g protein, 4g fiber

Tonight

The Man Candy comes home tonight!  His flight is only three hours delayed…  Oh well.  Tomorrow we’re heading southward to Charlotte, NC!   Roadtrip! 😀

Speaking of the man candy, you may be wondering why on earth I call the BF that.  Early on in our dating, we were out at a local bar and my dad happened to show up!  I was unsure whether or not Jarrod would be comfortable with me calling him my boyfriend, so I introduced him to my dad as my “man candy” (i.e., manly eye candy)…  Totally less awkward than calling him my boyfriend, right?!   Hahaha… well the nickname just sorta stuck.  My family still refers to him as my man candy.  He is pretty easy on the eyes afterall 😉
