Oats worth waking up for

Yesterday was a fully-loaded Saturday.  I had a wedding shower and a housewarming party to go to, and I felt a tinge of tiredness all throughout the day.  So when I got home around 11pm I was really looking forward to hitting the hay.  I layed down, closed my eyes, deep breath in, deep breath out….  Deep breath in, deep breath out…. and then my eyes opened and I laid on my back looking up at the ceiling.  I was wide awake.  Completely, 100%, ready-to-go awake.

I contemplated watching TV at first, but then decided to put my newly found energy into getting some work cranked out.  So I sat typing away on my laptop until 3:30am when I decided it was time to pull the plug.

Needless to say, I was less than enthusiastic about waking up this morning.  9:30 am rolled around (which is about 2-3 hours later than I usually sleep on weekends)… and suddenly a glimmer of excitement washed over me.  I remembered the amazing overnight oats I had prepared the night before.  Now I was more than amped to get up and tackle my interval training.  All I had to do was keep visualizing the cool creamy oats….

Check this out:

These are not your ordinary overnight oats.  This jar of JIF had about 2 tbsp of peanut butter left in it, so I mixed up my usual overnight oats in the jar and left them to hang out in the fridge overnight.  This morning, I topped the oats off with some blueberries and strawberries:

I COULD NOT WAIT to dive in to these:

Jealous??

Saturday eggs, smoothies, & tuna salad

This morning I woke up bright and early to try and pick up on my interval running (even though I had already decided to take a week off of high-impact excercise)…  I was able to get 1.5 intervals in before my knee started hurting 🙁  Looks like I’m going to be in the walking group at the Healthy Living Summit.

Breakfast of champions

After my disappointing run, I wanted a delicious breakfast to perk me up.  I cooked up 1 egg sunny side up, and had a piece of Country Hearth 12 Grain bread with sunflowers and a half a cup of oven baked potatoes:

Why are egg yolks SOOOO delicious tasting?  I find them oddly decadent!

Soon after downing this delicious breakfast, I was already feeling hungry and decided to make a fruit smoothie.

I threw the following into the blender:

  • 1 container Yoplait Strawberry Greek Yogurt
  • 1/2 cup Almond Breeze unsweetened Vanilla Almond Milk
  • 1/4 cup fresh blueberries
  • 6 medium strawberries
  • 1 cup fresh spinach
  • 1/2 cup ice

This puppy definitely filled my belly up!

Stats on my smoothie: 199 calories, 32g carbs, 2g fat, 14g protein, 4g fiber

After watching me down my smoothie, Jarrod got jealous and decided he wanted a smoothie too.  So we threw the following into the blender:

  • 1 scoop optimum nutrition whey chocolate protein
  • 1/2 cup frozen sliced bananas
  • 1 tbsp JIF peanut butter
  • 1/4 cup ground-up quick oats
  • 1/2 cup Almond Breeze unsweetened Vanilla Almond Milk
  • 1/2 cup ice

This doesn’t look like much, but I tried a sip and it was AMAZING:

Tasted like a shake you’d get at a hamburger stand.  I’m going to try and make a lower-calorie version sometime!

Stats on Jarrod’s chocolate peanut butter banana smoothie: 377 calories, 39g carbs, 12g fat, 33g protein, 6g fiber

Lunch

A little before lunch, I headed over to my mom’s house for some quality time with the fam.  Just as I was about to leave, I locked my keys in my trunk…  😯 What am I, 16 again?  When I was younger, I had the joy of consistently locking my keys in my car.  Actually, the day I first got my license I locked my keys in my trunk and had to have my dad come rescue me…. Oh joy….

Once I got the key situation all worked out, I headed home to make a tuna wrap for lunch.  Here’s what went into the tuna salad:

  • 1 can chunk light tuna in water, drained
  • 1/4 cup red onion
  • 1/2 a chopped roma tomato
  • 1 tbsp Ken’s Steakhouse Lite Creamy Ceaser Dressing
  • S&P

Then I added a few slices of a ginormous banana pepper I grew in my backyard garden:

I put the tuna salad atop a Light Flat-out Italian wrap with 1 cup of spinach:

Then I wrapped everything up burrito-style and grilled on the george foreman grill for about 5 minutes:

DELICIOUS.

Stats on the tuna wrap:  282 calories, 28g carbs, 9g fat, 32g protein, 12g fiber

I’m hoping to try out a new recipe for dinner tonight.. I have a few ideas in mind.  Maybe a nap will help things come to fruition 🙂

Birthday Recap!

Today I had a lovely lunch with my mom, sister, and nephew at Einstein’s bros bagels.  Einstein’s carries bagel thins now!  So I had a turkey sandwich on a wheat bagel thin with some delicious jalapeno chips.

After lunch,  I headed to Crooked River Salon to get my FIRST EVER pedicure!  I’ve never had a pedicure before simply because it didn’t seem like it would be worth the money (I’ve actually never had a massage either for these same reason).  But, Crooked River has ½ price manicures/pedicures on Mondays and since my birthday happened to fall on a Monday I thought I’d give it a shot.

Overall, it was a very relaxing experience!  I got to read magazines, drink about 3 cups of coffee, and just kind of hang out while I was pampered.  No complaints here!

I swung by Macy’s to pick myself up a little birthday present:

Clearance rack + $10 off coupon + Macy’s rewards = 😀

Didn’t get to wear these lovelies tonight though, since my toes were still drying!

For dinner, I met some friends at the Olde Harbor Inn, which is THE place to go for your birthday in my hometown (especially because you get your birthday dinner free 😉 )

I was in the mood to try something adventurous… but took some time pondering the menu before deciding.

My friend Tim went with the Big Island Salmon, which is char grilled and topped with Hawaiian sesame BBQ glaze and fresh pineapple mango salsa:

Allison went with the warm goat cheese salad, which has mixed greens, pine nuts, dried cherries, strawberries, goat cheese, and maple-peppercorn balsamic dressing:

I decided to go all-out and get the Split King Crab Legs!  I’ve never tried them before, and I thought it would be a nice step in the right direction on my long-term journey to liking seafood.

I was a little hesitant at first, but I was given a thorough crab-leg-eatin training session by the bar tender.

My first bite:

Guess what?  I loved them!!!

Of course I made a huge mess:

I had quite a bit of crab meat left over, so I brought it home to use for my lunch tomorrow.  I’ll have to do a little researching tonight to come up with something tasty!

Even thought the BF is in Belgium, his mom and sis stopped by!

They came bearing gifts:

I have a slight obsession with lawn gnomes… Iknow they are borderline creepy.. But I still <3 them!

I was also SUPER excited because I got a free T-shirt for my b-day:

You can always gauge how happy I am by the number of fully exposed teeth you can see in a photo.. hahahahah 😀

After dinner, we HAD to make a stop at Pav’s Creamery, which is THE BEST ice cream stand in our area (or the best in the world, depending on who you ask 😉 )

SOOOOO Many choices!!!!

I went with my old standby:  1 scoop vanilla with peanut butter, hot fudge, and whip cream:

Allison got a scoop of the Nuts over Cocounut:

And Tim got the banana yogurt with peanut butter sauce:

Fervently happy:

Birthday = Success!  Looking forward to my raincheck bday with the BF 😀

Friday Success-2, Failure-1

Happy Friday!!!  I’m pumped for the weekend!

Breakfast #2

After seeing the breakfast cookie success Leashieloo had on her blog, I decided it was time for round #2 with the breakfast cookie.

Last night  I gathered all my ingredients:

That’s:

  • 1/3 cup Bob’s Red Mill Extra Thick rolled oats
  • 1 tbsp smuckers organic creamy peanut butter
  •  1/8 cup unsweetened Almond Breeze Vanilla almond milk
  • 1/2 cup Mott’s unsweetened applesauce
  • 1/2 tsp brown sugar
  • 1/4 tsp cinnamon
  • 1 tsp sweetened coconut

I was a little hesitant when I combined all the ingredients because it seemed like it was just going to be a big mushy mess.  I contemplated making back-up overnight oats, then decided to just pack some extra almond milk so I could make on-the-spot-overnight oats if needed.

Well my worries were valid — my breakfast cookie didn’t turn out like a cookie but more of a mushy mess.

I added a 1/4 cup of almond breeze to the mix to make it more like overnight oats.  Overall, I think I’m just not a big fan of the applesauce in the breakfast cookies.  Not sure why, but it doesn’t jive with me!

Fail 🙁

Stats on the breakfast cookie (including extra almond breeze):  322 calories, 44g carbs, 12g fat, 9g protein, 5g fiber

Lunch!

Today I had a very special lunch treat!  My friend & colleague Natalie and I had an outdoor picnic courtesy of Jimmy Johns!

I got the usual:  Beach Club Unwich – Mayo + Onion + Giant pickle 😀

Success!

Weekend plans include shopping, dining, cookouts, R&R, and fam time 😀

Running in the Rain

I started this lovely Monday morning off with Day #2, Week #2 of interval training.  It looked pretty grey outside, but after consulting the local radar on my weather channel app, I determined I could definitely get 30 minutes in before any rain approached.

Whelp, I was about 15 minutes off on my calculation…  Half way through  my normal route, a torrential downpour started to erupt from the sky!  Running in the rain is actually pretty fun, and I would have kept right on going had I not JUST got a new iPhone to replace the iPhone that suffered water damage last week.  So, I threw my iphone in my sports bra to keep it dry and took shelter under a nearby tree for about 15 minutes until the rain let up.  Standing under the tree in the rain was actually pretty peaceful and relaxing!  I’m sure I looked like a creeper though 🙂

Breakfast #1

I’m really loving the grilled fruit and nut butter wraps I’ve been making for breakfast.  Today, I made one with half of a banana and Smucker’s Organic Peanut Butter atop a Mama Lupe’s low carb tortilla.  I wrapped everything up and threw it on the george foreman for about 5 minutes.

(I’ll have to post the pic later.. left the stinkin cord for my old camera at home!)

Soooo delicious!

Stats on B#1:  218 calories, 23g carbs, 11g fat, 10g protein, 7 g fiber

Breakfast #2

I was still pretty hungry after B#1, so I decided to overload my overnight oats.  Last night, I put 1/2 cup quick oats, 1/2 cup Unsweetened Vanilla Almond Breeze Almond milk, 1 tsp brown sugar, and some cinnamon in a bowl in the fridge.  This morning, I overloaded the oats with blueberries, strawberries, the other 1/2 of my breakfast banana, and some Barbara’s Bakery Peanut Butter Puffins for crunch.

Yum-o.

Stats on B#2:  308 calories, 61g carbs (hello excessive carbs), 6g fat, 8g protein, 10g fiber

Lunch

After all the carbs at breakfast, I was glad I packed a salad for lunch!  Today’s salad consisted of romaine lettuce, tomato, onion, cucumber, a sliced up Trader Joe’s Spinach Fontina Roasted Garlic Chicken Sausage, with 2tbsp Hidden Valley fat free ranch dressing.

Couldn’t get the flash to go off for the life of me… haha… need to spend some time playing with the camera! 🙂  I’m really liking the Trader Joe’s sausage!  I wish I would have picked up more than one kind… oh well, guess I’ll have to go back 😉
