Cheesy Marsala-Glazed Meatloaf {recipe}

When I was a kid, I loved ketchup-and-cheese sandwiches.  I’m not talking about grilled cheesy goodness dunked in ketchup, here; this was two pieces of Home Pride, a single slice of Kraft American, and a heavy-handed squiggle of Heinz 57.  I was obsessed with ketchup.  Ketchup made everything better.  Although both parents deny preparing said ketchup-and-cheese sandwiches for us kids and my sister says the thought of such a sandwich “makes her want to hurk,” there’s no denying that ketchup was the star ingredient in my mom’s meatloaf.  I was, of course, meatloaf’s number one fan.  Just the word “meatloaf” takes me back to those days, standing in the kitchen, watching my mom transform a mound of ground beef into a perfect oval with rapid two-handed pats before she iced the whole thing with ketchup and tossed it into the oven.  It killed me that meatloaf took so long to cook.  An hour?!  Really, Mom?  And then, as we (finally) sat down to eat, I’d silently start hoping for leftovers, because the only thing better than Mom’s meatloaf was a cold, leftover meatloaf-and-ketchup sandwich the next day.

Now that I’m all old and mature, my ketchup-and-cheese sandwich has been upgraded to a crusty baguette with hunks of gooey brie, and a taste for wine has replaced my craving for all things ketchup.  And meatloaf?  Well, I still love it, and this cheesy Marsala-glazed meatloaf recipe puts a classy spin on the nostalgic meal.  It’s still got ketchup (as all good meatloaves do), but this one has hunks of gooey, white cheddar cheese and is dressed with a sweet wine glaze.  It tastes indulgent and traditional all at once, and it’s a dinner both kids and adults will enjoy.

Dry Marsala wine is fantastic in this recipe (I used Colombo Fine Dry Marsala Wine, which has hints of vanilla and raisin).  The meatloaf can be prepared a day ahead and stored covered in the fridge for a hearty, low-stress meal the next day.

I put ketchup on my ketchup

While on vacation in Charleston, we came across several touristy shops selling t-shirts with funny sayings.  Jarrod seriously contemplated buying me this T-shirt:

Hahaha… I do use ketchup quite frequently.  I’m just a class act like that 😉

Breakfast #1

Last in the trio of eggwhite/turkey sausage scrambles I made Sunday night… Served up with a dollop of you-know-what 😉

Stats on Scramble, Broccoli, & Ketchup:  180 calories, 10g carbs, 5g fat, 24g protein, 2g fiber

Breakfast #2

I started breakfast #2 off with some Blueberry Cho-cho-chobani:

Then I added some strawberries (in my hunger-tinged excitement, I forgot to use my flash…)

MMMMMMMM…. Come clooosssseeerrr:

So darn good.

Stats on B#2:  157 calories, 24g carbs, 0g fat, 14g protein, 1g fiber

Lunch

 The turkey meatloaf I made last night was so yummy, I immediately had a craving for a meatloaf sandwich!  Needless to say, I was SUPER excited about my lunch today.  

I sliced up one of the turkey meat muffins:

I placed the cold slices of meatloaf on a Pepperidge Farm 7 Grain Deli Flat, and then added the star of the show:  KETCHUP.

That’s what actually made me think of the ketchup on ketchup T-shirt.  Even though my turkey meatloaf had ketchup mixed in and was thoroughly basted with ketchup before baking, I still needed to put some ketchup on my leftover meatloaf sandwich 😀

Over the weekend I made the BF a beautiful banana granola parfait.  Apparently he liked it so much, he decided to recreate it in my workweek absence:

I love that he even went the extra mile and put it in a pretty glass.  Sometimes ya just gotta treat yourself, am I right?

Zucchini Pancakes

Sometimes life is just about compromises.  Tonight, I had a serious craving for some french fries… a big ole mound of french fries and some ketchup.. mmmmm….

In lieu of this, I opted for a big ole salad…  hmm big ole salad vs. big ole mound of french fries?  That’s not exactly a fair fight…

My salad consisted of:

  • 1/2 bag fresh express romaine
  • 2.5 ounces grilled chicken breast
  • 1 roma tomato
  • 1/4 cup red onion
  • 1/4 cup white mushrooms
  • 2 tbsp Ken’s Steakhouse Lite Italian Romano dressing

 

Not exactly a french-fry-craving cure… but darn tasty in its own right. 

Stats on the salad:  204 calories, 18g carbs, 6g fat, 17g protein, 5g fiber

To help curb my desire for some grease, I decided to try out this recipe I found for Zucchini Pancakes on Gina’s Skinny Taste blog

Here’s what went in to my zucchini pancakes:

  • 1 medium zucchini, shredded
  • 1 shallot, chopped
  • 2 tbsp chopped chives (holler at you, backyard garden 😉 )
  • 2 tbsp chopped parsley
  • 1 clove garlic, minced
  • 1 large egg white
  • 2 tsp DiGiorno Grated Parmesan Cheese
  • 1 tbsp all purpose flour
  • 1/4 tsp each S&P
  • Sprinkling of red pepper flakes

I combined everything up, then heated up a skillet I had sprayed with some cooking spray.  Using a small cookie dough scooper, I dropped 3 pancakes into the pan.

These tasted AWESOME.  They really spoke to the onion-lover in me.  Only problem was they didn’t get crispy like a traditional potato pancake.  I tried several different methods, including flattening them out til they were very thin–but they just wouldn’t crisp up!  Maybe it’s the whole egg that helps to get them crispy–but regardless of the texture issues the taste was yum-o.

I tried one bite with some ketchup of course:

The zucchini pancake “batter” made 9 of these little fritters.  I ate 7 of them (I had to try one for each cooking method…. haha), and I saved two of them for breakfast tomorrow so I can see how well they heat up in the microwave.

Short and sweet

Breakfast #1

First thing first, as soon as I opened my eyes this morning it was all about EGGS.  I cooked up a 3 egg white scramble with S&P and Frank’s Red Hot, 1/2 cup oven baked potatoes, 1/2 of a Thomas’ multi-grain English muffin, and a dollop of ketchup (of course!):

Stats of B#1:  168 calories, 31g carbs, 1g fat, 16g protein, 5g fiber

Breakfast #2

 A couple hours later, I eagerly dug into my overnight oats.  I made the usual version, but subbed in blueberries for strawberries and added a tablespoon Bear Naked Maple Pecan Granola:

The BF’s Breakfast #1

When we were on vacation in Charleston, we had breakfast at Hominy Grill twice and it was DELICIOUS.  Both times, we considered ordering their fruit and granola parfait, but opted for pancakes and omelets instead.  Ever since then, the BF has been craving the parfait, so being the nice lady I am, I made him one for breakfast this morning:

 

This parfait consisted of 1 container Dannon Vanilla Greek Yogurt, 1/4 cup Bear Naked Maple Pecan Granola, and 1 sliced banana:

 

Jarrod said he REALLY like the parfait.  Only change we’ll make for next time is to use strawberry yogurt instead.  YUM!

Stats on the parfait:  345 calories, 66g carbs, 5g fat, 17g protein, 5g fiber

Lunch

Lunch was 2 ounces of leftover chicken from last night’s Cajun pasta atop a Light Flat-out Italian wrap with spinach, tomato, onion, and a few drizzles of fat-free Italian dressing:

I wrapped everything up burrito-style, then cooked on the george foreman grill for about 5 minutes until it was heated through and the wrap was crispy:

YUM!

Stats on the wrap:  220 calories, 28g carbs, 4g fat, 28g protein, 12g fiber

And with that, it’s off to make some dinner!

Canada, Greece, Repeat.

Around the world and back again in three short meals 🙂  Geesh, I need a vacation…  Luckily, only two weeks til my Char-Char-cation!!!  (Charlotte/Charleston/Vacation 😉 )

Breakfast #1 = Canada

Canadian Bacon Eggins! Last night, I decided to whip up some eggins and use some of the Canadian Bacon I picked up at Trader Joe’s over the weekend.

I sprayed a muffin tin down with cooking spray, and plopped one piece of the Canadian bacon in each of 6 muffin tins.

Then I mixed together 9 egg whites, splash of water, S&P, red pepper flakes, franks red hot and poured it evenly into the 6 muffin tins. (Word to the wise – if you use a container with a spout it makes life A LOT easier 🙂 )

I cooked them for about 35 minutes at 350 degrees.

I had three of these little guys for breakfast with a dollop of ketchup.

Stats for 3 Canadian Bacon Eggins & ketchup: 147 calories, 6g carbs, 1g fat, 26g protein, 0g fiber

 

Breakfast #2 = Greece

1/2 cup Trader Joe’s nonfat vanilla greek yogurt with 1/4 cup each strawberries and blueberries.

Trader Joe’s greek yogurt was so tasty.  It’s not overly sweet, which I really liked.  I think I could have ate about 3 more servings of this 🙂

Stats: 133 calories, 23g carbs, 0g fat, 9g protein, 2g fiber

Last night’s smoothie

Since lunch was a repeat, I thought I’d showcase the lovely little smoothie I made last night. Everyday, I have a mid afternoon snack and a late night snack, each of which are around 100 calories. They are usually something simple like an apple or a bowl of low-cal cereal and almond milk, and don’t typically make it into the blog.

Last night, I was feeling up for a smoothie so I put the following into the blender:

  • 1/4 cup Oikos nonfat plain yogurt
  • 1 packet Truvia (Stevia)
  • 1/4 cup unsweetened Almond Breeze Vanilla Almond Milk
  • 1/4 cup each of frozen fresh blueberries, strawberries, and black raspberries

All blended up:

This lil guy was quite tasty, and he is quite the looker too 😉 !

Stats on the berry smoothie: 92 calories, 18g carbs, 1g fat, 6g protein, 4g fiber
