Some like it hot

There is a small portion of the population out there that crave heat in their food.  These are the people who actually enjoy the runny nose you inevitably get when eating something hot.  The people who know when others say something is “hot” it won’t even phase them because of their extreme tolerance for heat.  The people who’ve contemplated carrying around a bottle of hot sauce in their purse/bookbag/car.  The people who have found a way to incorporate buffalo sauce in to breakfast, lunch, AND dinner.  The people who constantly get asked “you put hot sauce on that?!”

You know who you are.

This recipe is for you.

I bring you slow-cooked buffalo chicken sandwiches:

When I first stumbled upon this recipe, I KNEW it was destiny.  Buffalo chicken dip is a staple in my circle of friends and family, so how could a buffalo chicken sandwich NOT be amazing?

Simple answer.  If you like hot food, you will love this sandwich.

The recipe was very easy to throw together. 

Throw the following into a plastic baggie to marinate overnight:

  • 4 raw skinless boneless chicken breasts
  • 3/4 of a Quart (24 ounces) buffalo wing sauce (use your favorite brand–we used Gionino’s, of course)
  • 1 package dry ranch salad dressing mix

The next morning toss the marinated chicken into a crockpot, and cook on low for 6 hours.  Once the chicken is cooked, pull the breasts out of the crockpot and shred them up with two forks.  Toss the meat back in and then add:

  •  2 tablespoons butter
  • 8 ounces of buffalo wing sauce (which is the remainder of the quart)

Cook for one hour more, and then serve on top of a toasted kaiser roll.

To make the sandwich even more amazing, add some pepper jack cheese.

Big Easy – Part 1

Here’s a recap of our first day in the Big Easy:

Jarrod almost fell down the escalator in the airport.  Sadly, I did not capture this on video.

We hopped in a cab and headed to the hotel, which is right on the border of the business district and the French quarter.

After we cleaned up, we headed to the French Quarter and stopped in at the first restaurant that caught our eye:  Jean Lafitte Bistro… though oddly that wasn’t the name on the front of the building… Peculiar…

Mock mac and cheese

One of life’s true pleasures is a big ole plate of macaroni and cheese.  I’m talking homemade oven-baked cheesy glory.  Once fall rolls around, I start to get some serious cravings for comfort food.  I’m sure you know what I’m talking about.  Comfort foods.  The foods that make you feel warm and cuddly from the inside out.  The foods that make you want to hug your belly and sway side to side just because they taste so dang good.  The foods that you’d like to pour into a giant tub so you could jump in and swaddle yourself in their heavenly gooey warmth….  What.. that’s just me?!

Anyway, tonight I decided to give healthified mac and cheese a go in an attempt to satisfy my comfort food craving.  I remember seeing a recipe a while back on the Hungry Girl email blast, and that was the basis for my dinner (though I couldn’t find the email).

The main components of my mac and cheese were Carba Nada pasta and lightly sauced broccoli:

Carba nada only takes 5 minutes to cook, so this meal was ready for chowing in no time!  While the pasta cooked I also threw together a small salad with romaine lettuce, tomato, onion, and some Ken’s Lite Caesar dressing (LOVE that stuff).

The flavors were a little mild, so I added some red pepper flakes and black pepper on top:

Not too shabby!  If you could get laughing cow in light cheddar that would take this dinner to a whole new level!

Stats on 1 serving mock mac and cheese:  235 calories, 32g carbs, 5g fat, 16g protein, 8g fiber

On a separate note, I’m debating on whether or not to join a gym for the winter.  Twice in my life I had succumbed to signing up for a year-long gym membership, and BOTH times I stopped going after only a couple months… yet still had to pay for the entire year.  I’m really not big on gyms… but without a gym, I see myself simply not exercising this winter.  Any tips for making the gym FUN?

Italian take #2

Yesterday afternoon, we arrived in Charleston.  In an effort to save $$$, I booked us a studio apartment rather than staying in a hotel in the historic district.  This saved us about $400, but we are about 1-2 miles out from most of the restaurants and sightseeing we want to do.  I think the savings offsets the distance, plus with all the eating we’re doing the more walking the better!

We have a full kitchen, washer dryer, and nice dining area too:

While Jarrod was in Belgium he said all he wanted was some decent Italian food, and there was none to be found near his worksite.  So, I grudgingly complied with his request to get Italian for the second night in a row….  😉 Just kidding–Italian is my fav too!

After some googling, we decided to go to Bocci’s in Historic Charleston because their menu had a lot of different dishes we had never tried.

Typically, when I go to the store to buy wine I end up with Cabernet about 90% of the time.  So in an effort to keep trying new things we went with Bocci’s special wine of the night:

This wine was FANTASTIC!  I’m so glad the waitress recommended it.  It was full bodied and had a great spice to it.

For the appetizer, we really REALLY wanted to order the bruschetta….  But we decided to push ourselves outside our tomato-basil-cheesy-bread-goodness comfort zone and instead ordered the Arancini.  The arancini is an arborio rice ball made with sausage, parmesan, ricotta and roasted red peppers, fried to golden brown and served with marinara sauce:

And it was absolutely delicious!

The ambiance of the restaurant was fantastic.  It was low lit, and had a series of small rooms with sporadic tables of all shapes and sizes.  It reminded me of restaurants I visited in Europe back in college, especially with the huge doors that opened up to the outdoors.

For our main entre, we went with the Chicken Conchiglia:  Large pasta shells stuffed with chicken, three cheese mix, and herbs, topped with tomato basil sauce and baked:

These were so tasty — and super filling!  We ended up brining 3 of the 5 shells home with us.  I think we might make them into sandwiches later today 😀

Charleston has so much character (and so much humidity 😉 ). 

Since I’ve been gone, two of my friends from home have decided to try out overnight oats (and send me pictures)!  I think they miss me 🙂

😀 So if you haven’t tried them based on my raving, now you have two additional ravers to back up my love for overnight oats!  I think that’s the first thing I’m going to eat when I get home!

Tuesday Tastes Good

Today marks Day #3, week #3 of my interval training plan!  I am just flying right along….. Which does make me a little nervous.  I keep waiting for another knee injury to surface… Hopefully with good stretching and elevation while at work I can continue to work my way back up to running the entire time.

I’m really hoping to be able to participate in the Healthy Living Summit group run in August too…  We shall see 🙂

Breakfast #1:  Just-sayin-no to muffin(tops)

I had a breakfast meeting at Panera this morning for the Knowledgeable Network of Women in Akron.  In a previous life, I would have been PUMPED for a muffie and/or bagel from Panera…  Coffee cake?  Bring-it-on.  Nowadays I just stare longingly at these delicious treats through the glass case and drool…. 

BUT there is good news!  Panera carries Stonyfield Farms yogurt!  So, I ordered up some of that with fruit (no granola though) and a TALLLLLL coffee 🙂

Breakfast #2:  Giving low-carb waffles a second go

I made low-carb waffles for the first time last week, and I was really excited to try them again.  There’s lots of things I’d like to play around with, but for the sake of determining what works and what doesn’t I only changed a few minor things this time around.

Last night I cooked up the waffle batter below for 10 minutes on the waffle iron:

This morning, I popped the waffles into the toaster, then topped ’em off with some fresh/frozen strawberries/bananas/blackberries that I heated up in the microwave along with some PB2 (added extra H20 fo’ the drizzle).

YUMMMMMM…..  So tasty, even though the texture is not quite what I want.  Guess I’ll just have to keep on experimenting.  No complaints here!

Lunch

Lately, I’m pretty much obsessed with hummus and spinach sandwiches of any variety.  It’s not just me either.  I made a wrap with hummus on it for the BF over the weekend, and he seconded my desire to rub it all over my face and marinate in its deliciousness.  Hahahah… 😉
