Hook Line & Savor: Black Bean Crusted Cod and Avocado Salad with Chimichurri Dressing

A big thanks to Hook Line and Savor for sponsoring this post and for creating great-tasting, allergy-friendly, clean ingredient products.  All thoughts and opinions are my own.

When the word “hangry” became a thing I felt so very validated.  After years of me proclaiming that “bad things happen when I don’t eat” (sort of like a werewolf faced with a full moon or like the Hulk when he rips off his t-shirt right before he smashes things) the world had finally slapped a label on the condition.  Hungry + angry = HANGRY.  A complex concoction of physical and emotional unfulfillment.  A critical mass of dissatisfaction.  A state that once entered into left me incapable of making conversation, let alone decisions.  In fact, once hangry, just the thought of deciding what to make for dinner often left me curled up on the couch with that soft checkered blanket I’ve had since I was thirteen, sucking my thumb, and wishing my mom was my roommate so she could make me some dang meatloaf.  Hangry.  When that word became a thing, I realized (at least in this one respect) I wasn’t a weirdo.

(This is an actual photo of me trying to decide what to make for dinner.)

Through years of dealing with my condition, I’ve developed several coping mechanisms, namely grilled cheese and peanut butter toast.  Two quick and carb-filled comforting cure-alls.  But you know the problem with grilled cheese for dinner?  It always leaves you wanting another grilled cheese.  Alas, I’d considered stocking the freezer chock full of microwave meals for times when life got crazy, but the problem is the ingredients lists on these sorts of pre-packaged foods are typically so out of control that I’d regret fueling my body with this sort of junk.  Oh and also, I don’t own a microwave.

3 Bangin Brat Relish Recipes {as seen on WBTV}

It’s cookout season–and any excuse to celebrate gets my vote!  Brats are the perfect backyard barbecue food; they’re easy to cook and super simple to customize, just by switching up your relish and toppings.

BRATS 3

I spent the morning hanging out with WBTV talking Bratsgiving!  Check out the video below!

Without further ado, here are three brat relish recipes inspired by some of my favorite foods:  banh mi, bruschetta, and guacamole!

2 Easy Grilled Vegetarian Sides {recipe}

If you caught my last recipe post, you already know I’ve been tricking myself to eat fish by throwing it in a taco and adding excessive toppings, like a parent hiding veggies in their kid’s mac and cheese.  It’s sad but true.  Of course, grilling fish makes it a little more palatable, plus nothing beats grilling in the summer (even if it is fish…).  Fresh.  Fast.  Flavorful.  And so darn pretty.

How to make your own ground meat

So, did everyone else know how crazy easy it is to make your own ground meats?  I had no idea until I saw a blurb in Cooking Light about putting chicken breast in a food processor.  Sound odd to anyone else?  I was intrigued so I decided to give it a go over the weekend.

Take a looksie at these chicken tacos I made!

I don’t mean to brag, but that may be the most beautiful taco I’ve ever laid eyes on.  What’s even more beautful was how super easy it was to make.  First I started by tossing 1 jalapeno and 2 tsp minced garlic into a food processor:

I gave that  a good pulse:

Then added 8 ounces chopped chicken breast:

And literally 10 seonds later I had my very own homemade (slightly green tinted) ground chicken breast!

Isn’t it funny how something so simple can give you such a great sense of pride and accomplishment?  😀

I threw the ground chicken into a pan and seasoned with S&P and some cayenne pepper:

The meat cooked up in no time!

Next I sliced up some fresh avocado.  Delicioussssssssnesssssss:

I used some Tumaro’s Low Carb tortillas (only 60 calories a pop) for my taco base, then added 2 ounces of the chicken, some chopped red onion, tomato, shredded cabbage, chopped cilantro, a little dribble of fat free sour cream, about 2 tbsp of avocado, and a little drizzle o’ lime:

A little overboard on the toppings?  Perhaps…

I also added some Frank’s red hot for good measure (its hiding under the veggies)

8 ounces of chicken made me enough for four tacos.  I ate two for dinner, and wrapped the remaining two up in plastic wrap for dinner the next night (by the way, the tacos were equally delicious cold 🙂 ).

Crackamole

I have a confession.  My mother is the Grinch.

She hates Christmas presents…

Gets really mad at her children for buying her Christmas presents….

And she’s as cuddly as a cactus, as charming as an eel….

Justttttt kidding!  Mwah hah hahhhhhhhhhh Smile

My Mom does, in fact, hate when her kids buy Christmas presents for her.  So this year, I channeled my inner third grader, and whipped up a homemade gift for the Madre:
