Cottage cheese (bleghhhhhh), eggs, and oatmeal?
Despite being super healthy and good for your body, these three ingredients have one MAJOR thing in common.

Thank you to Jessica from Warfield Ninjas for sharing with me one of the simplest yet tastiest belly pleasing recipes I’ve tried in a while!
For two good sized pancakes (similar in size to a toaster waffle), you’ll need to combine the following in a food processor:
- 1/3 cup uncooked oats (I used quick oats)
- 1/3 cottage cheese (I used fat free)
- 2 egg whites
Give all the goods a quick buzz in the food processor until the lumps are gone, and cook them up like you would “normal” pancakes!

I was feeling a little OVER THE TOP, so I decided to top mine off with some all-natural peanut butter, Dannon Vanilla Greek yogurt, strawberries, AND Smuckers sugar free syrup.
Feel free to use the toppings of your choice. To each her own pancake, I always say
I made a smaller version of these for my mom over the holiday weekend, and she said they were surprisingly tasty and that she appreciated the “healthy and hearty” texture of the pancakes. I completely agree!

Stats on two pancakes (without any toppings): 203 calories, 21g carbs, 2g fat, 22g protein, 3g fiber.

I love pancakes and I never make them. Which frankly is rude to both pancakes and my belly. I think it’s time we get reacquianted- and now I know just the recipe 😉
Not a fan of cottage cheese, but the pancakes look fab. Do you actually taste the CC?
I DESPISE cottage cheese, but really like these. They didn’t taste like cottage cheese to me, and once you get the lumps out you really can’t tell the cc is even in there! In one batch I added cinnamon and a little vanilla extract, and that was tasty too.

Every time I see pancakes I instantly drool and crave them. I don’t know if it’s because pancakes rock or if it’s because I love having an excuse to use maple syrup.

Pancakes are one of my favorite dishes and as long as can’t taste the cottage cheese I’ll be happy. I think I will top them off with peanut butter, strawberries and whip cream!
Found your blog last week! Love your blog. I have just started really focusing on eating healthy and watching the amount of calories I eat. I made these pancakes today and they were so filling and yummy. I dipped them in Natures Hollow sugar free maple syrup sweetened with xylitol. Super delicious! Thanks for your blog and great ideas!
