When the BF asked what I wanted for dinner, all I could think of was COMFORT FOOD! He found this Taste of Home Recipe for Spicy White Chili, and whipped together a comforting dinner fit for a fancy restaurant:

I didn’t lift a finger in the creation of this meal. But I’m told it was very easy to put together 🙂
Our chili was pretty similar to the Taste of Home recipe. It started off with a large sauce pan and some sautéing:
- 2 medium onions, chopped
- 1 tablespoon olive oil
Once the onions are soft and translucent, add:
- 4 garlic cloves, minced
- 2 cans (4 ounces each) chopped green chilies
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 32 ounces free-range chicken broth
- 4 cups cubed cooked chicken
- 1 diced jalapeno
- 3 cans great northern beans, rinsed and drained
Let simmer for 15 minutes, spoon into bowls and add:
- Cheddar Jack cheese & jalapeno peppers for garnish
- Some crusty buns fresh from the oven 😀 (we used the crusty dinner rolls from the freezer aisle)
This was DELICIOUS. Luckily, I was able to finangle some for lunch tomorrow

So I made this for dinner last night, and I have to tell you…. AMAZING. I cut the recipe in half, and now I wish I hadn’t so I would have had more leftovers! Definitely a repeat. 🙂
